Aloo Dum
INGREDIENTS:
1 tbsp of cumin seeds
1 tbsp of coriander seeds
1” cinamon
3 green cardamoms
10 peppercorns
7-8 cloves
6 dry red chillies
1 tbsp of khush khush/ poppy seeds
100ml of mustard oil
1 kg baby potato
1 tsp of turmeric powder, mix it well
4 medium sized potatoes
6 Green chillies roughly chopped
1” Ginger
1/4 cup of cashew nuts
2 bay leaves
1 tsp turmeric powder
1 tsp red chilli powder
Water
Salt to taste
1/4 cup of yogurt
2 tsp of sugar
2 tbsp of freshly chopped coriander leaves
1 tbsp of ghee
METHOD:
For the Spice Mix
Heat a kadhai
Roast 1 tbsp of cumin seeds
1 tbsp of coriander seeds
1” cinamon
3 green cardamoms
10 peppercorns
7-8 cloves
Roast these lightly on a low flame
Roast 6 dry red chillies
Shut the flame
Add 1 tbsp of khush khush/ poppy seeds
Cool this and grind it to a fine powder
Heat 100ml of mustard oil
Take 1 kg baby potato
Add 1 tsp of turmeric powder, mix it well
Fry the potatoes golden and crisp
Remove the potatoes
For gravy
Take 4 medium sized potatoes
6 Green chillies roughly chopped
1” Ginger
Add 1/4 cup of cashew nuts
Grind it into a fine puree
In the same oil
Add 2 bay leaves
1 tsp turmeric powder
1 tsp red chilli powder
Add a little water
Cook the masala for 2 minutes
Add the tomato paste
Sauté the masala
Add a little water
Sauté it further until the oil separates
Add the fried potatoes
Add 3/4 cup of water
Add the spice mix powder
Add another 1/2 cup of water, mix it well
Add salt to taste
Cover and cook for 10 minutes on medium to low flame
Open the lid after 20 minutes
Add 1/4 cup of yogurt
Mix it well
Cover & cook for another 5-10 minutes
Add 2 tsp of sugar
2 tbsp of freshly chopped coriander leaves
1 tbsp of ghee
Give it a good mix
Serve
