CHICKEN DUM BIRYANI
INGREDIENTS:
1 kg chicken
2 cups of yogurt
2 tbsp of garlic paste
2 tbsp of ginger paste
2 large tomatoes finely chopped
4 potatoes fried
6-7 green chillies slit
6-7 Dried plums (aloo bukhara)
Handful of fresh mint leaves chopped
Handful of fresh coriander leaves chopped
1/2 tsp of Turmeric powder
3-4 tbsp of chilly powder
Salt to taste
2 tbsp of homemade garam masala ( LINK TO RECIPE- [ Ссылка ] )
1/2 cup of oil
5 onions that are sliced and fried crisp & golden
750g of Rice cooked only to 80%
Saffron water
Ghee
Clean Napkin to cover
METHOD:
Take 1 kg chicken
Add 2 cups of yogurt
Add 2 tbsp of garlic paste
2 tbsp of ginger paste
Add 2 large tomatoes finely chopped
4 potatoes fried
6-7 green chillies slit
6-7 Dried plums (aloo bukhara)
Add handful of fresh mint leaves chopped
Add handful of fresh coriander leaves chopped
Add 1/2 tsp of Turmeric powder
Add 3-4 tbsp of chilly powder
Add salt to taste
Add 2 tbsp of homemade garam masala (find recipe link)
Add 1/2 cup of oil
Add 5 onions that are sliced and fried crisp & golden
Mix well
Rest the meat for 1 hour before we cook it
Take 750g of Rice cooked only to 80%
Add the rice on the chicken
Drizzle saffron water
Drizzle some ghee on top
Garnish it with some fried onions
Add some freshly chopped coriander
Cook it on a dum by placing a napkin on top, cover it with a lid, place something heavy on top so the steam doesn’t escape
Keep the flame on a high for 10 minutes
Then lower the flame on a medium low and let it cook for another 40-45 minutes
Shut the flame and let the biryani rest for 30 minutes more
After 30 minutes, serve
