Ingredients:
Beef Shin (cubed)
Salt & Fresh cracked black pepper
Olive Oil
4 small tomatoes
Passata or Tomato Paste
1/2 Red or Brown Onion
2 small carrots grated
6 garlic cloves
Fennel Seed whole
Oregano dried
Chilli flakes
Fresh Thyme
Bay Leaves
Red Wine
Beef Stock
Directions:
Over medium high heat in a dutch oven add olive oil and then onion and carrots letting cook til tender for a few minutes.
Add tomatoes and simmer until softening
Add Beef Shin cube and stir to combine
Add in garlic cloves and all dry seasonings (except bay leaves)
Add in passata and beef stock, stir to combine
Add in fresh thyme and bay leaves on top
Put the lid on and into the oven for 6 hours (can do 4 if needed)
At about 2-3hrs check the meat, give it a stirIn the final 1 hour set the lid ajar to let the sauce reduce and thicken
Remove from the oven and I like to use a masher to seperate the meat - Beef shin is so tender at this stage it just melts apart
For serving:
Best served with Pappardelle pasta, cook to al'dente
In a saute pan add a scoop of the meat, let it slightly brown/thicken
Add in cooked pasta and a splash of olive oil or nub of butter, saute to combine
Serve and generously garnish with parmesan, chilli oil and fresh herbs as desired
