Goat intestine curry, also known as "kaleji curry," is a unique and flavorful dish in many parts of the world. Here's a description of how to prepare it with 1 kg of goat intestines:
Ingredients:
- 1 kg goat intestines, cleaned and washed thoroughly
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, slit
- 1/2 cup yogurt
- 2 teaspoons red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- Salt to taste
- 2-3 tablespoons cooking oil
- Fresh coriander leaves for garnish
Instructions:
1. Cut the cleaned goat intestines into bite-sized pieces and set them aside.
2. Heat oil in a heavy-bottomed pan or pressure cooker. Add chopped onions and sauté until they become golden brown.
3. Add the minced garlic, grated ginger, and green chilies. Sauté for a few more minutes until the raw aroma disappears.
4. Add the chopped tomatoes and cook until they soften and the oil begins to separate from the mixture.
5. Add the goat intestines and cook on medium-high heat, stirring occasionally, until they start to brown.
6. Add red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well and continue cooking for a few minutes until the spices are well incorporated.
7. Reduce the heat and add yogurt. Stir continuously to avoid curdling and let it cook until the oil separates.
8. If using a pressure cooker, add enough water to cover the goat intestines, close the lid, and pressure cook for about 3-4 whistles or until they are tender. If using a regular pan, continue to cook on low heat, adding water as needed, until the intestines are tender (this might take a while).
9. Once the intestines are tender, add garam masala and adjust salt and spice levels according to your preference. Simmer for a few more minutes.
10. Garnish with fresh coriander leaves.
