You always want to keep the different pieces of your work on seperate layers. For example, what if you had text over an image, both on the same layer? Later on if you wanted to change just the text, you wouldn't be able to if they weren't seperated by layers. By editing the text, it would also effect the picture underneath. Thankfully, layers solve that problem!
