Red Lentil Stew Recipe
Ingredients:
• 1 cup red lentils
• 2 cups water
• 3 tbsp olive oil
• 1/2 tsp coriander seeds
• 1/2 tsp red pepper flakes
• 1 cup onion, finely chopped
• 1/4 tsp salt
• 1 1/2 tbsp fresh ginger, finely chopped
• 2 tbsp garlic, finely chopped
• 1 1/2 cups tomatoes, peeled and chopped
• 1 tsp salt
• 1/2 tsp red pepper flakes
• 1/2 tsp turmeric
• 2 cups vegetable broth
• 2 cups spinach
• 1/2 cup parsley, chopped
• 4 tbsp lemon juice
Instructions:
1. Rinse the red lentils, then cook them in 2 cups of water for 20 minutes until soft.
2. In a separate pan, heat the olive oil. Add the coriander seeds and red pepper flakes, and sauté until fragrant.
3. Add the onions and 1/4 tsp salt, and cook until the onions are soft.
4. Stir in the ginger and garlic, cooking for a few more minutes until fragrant.
5. Add the chopped tomatoes, 1 tsp salt, red pepper flakes, and turmeric. Cook everything together for a few minutes until the tomatoes soften.
6. Add the cooked lentils and vegetable broth, stirring to combine.
7. Let the stew simmer for 10 minutes, then add the spinach, parsley, and lemon juice.
8. Cook for another 5 minutes until the spinach wilts.
9. Serve warm. This dish is quick and easy to prepare.
