Braised Beef Nachos
serves 4 as appetizer
Ingredients
1 9 oz bag tortilla chips
1 can black beans, rinsed
1 bunch scallions, trimmed and chopped (reserve some for sprinkling on after cooking)
2 cups Mexican braised beef (recipe here), or cooked and seasoned ground beef
8 oz block pepper jack cheese, shredded
8 oz block cheddar cheese, shredded
Toppings
1 pint cherry tomatoes, chopped
1 cup guacamole or sliced avocado
¼ cup cilantro leaves, roughly chopped
sour cream
salsa
Instructions
Preheat oven to 350 degrees
Arrange half of the tortilla chips in one layer on a rimmed sheet pan.
Sprinkle with half of black beans and half of scallions.
Top with half of braised beef, being sure to evenly distribute and drain of excess liquid.
Sprinkle with half of each cheese, adding more than you think you should (hey, nachos are cheesy!).
Cover with remaining tortilla chips, making one layer as before.
Add beans, scallions, beef, and cheese as above.
Bake for 15-20 minutes, until cheese has melted and beef is hot.
Remove from oven and add tomatoes, guacamole and other toppings as desired. Serve hot.
