Chai, for so many people I know is not just a beverage. It’s an emotion, a saga, a romantic relationship they can’t seem to ever break up with, a meeting and it’s narrative is so many times based on where and how people have their first chai, or how they like their chai!
For me , chai is just a little boy who’d create havoc in my gut if consumed. But how does one not sip on chai in those ‘Haseen Waadiyaan’ of Jammu?
This tiny little kiosk served delicious chai with piping hot pakodas fried in mustard oil. Oye hoye, those with me who love their chai, say this was indeed an experience of a lifetime.
Eating in places that have become a heritage over time just makes me as a chef feel so sentimental, as these places have seen people, witnessed stories and marked events like no other. I wish to one day have a memoir where I can share my stories where I have visited several such places with a legacy, so that even I could be a part of the memoir of those places and their stories 💛
