My Mexican Gorditas with papas a la Mexicana and ground beef are out of this world delicious. You may be familiar with some wannabe Gorditas, and there are some out there, but they’ll never top homemade. If you’ve made homemade corn tortillas, then you’re just a step away from making Gorditas, because they are just like a corn tortilla but chubbier (gordita) and Gorditas are cut open like a pocket then filled with your favorite filling. I chose cheesy Papas a la Mexicana with ground beef because it is one of my favorite fillings for gorditas, but they can be filled wit chorizo and eggs, barbacoa, ground beef, chicken, pork carnitas, refried beans and cheese to name a few. You can’t go wrong with this recipe, because whether you make them crispy or soft, big or small they will be delicious…you can top your filling with shredded lettuce, sour cream, Mexican CREMA, avocado, and your favorite salsa, the choices are endless. TIPS:———
1. Make sure masa is well hydrated and covered.
2. If you have cracks in masa, add water.
3. Cut gorditas open when hot, because it’ll be hard to do when cold.

3 C. MASECA instant corn masa flour
1/2 tsp Salt
1 Tbsp vegetable oil
1 3/4-2 C. Warm water
Cook on med/high heat
FILLING INGREDIENTS———————————
2 med Russet potatoes (small cubes)
2 1/2 Tbsp cooking oil
1/2 lb 80/20 ground beef (drained)
1/4 medium chopped onion
Seasoning Salt (as needed)
1 Xlarge jalapeño (seeds removed, cut in strips)
1 med/ large Roma tomato
Freshly grated Monterrey jack cheese (as needed)
EXTRAS————————————-
