Ingredients:
Brisket
Olive Oil
Garlic - 10 cloves
Shallots or Leeks - 1 cup
Tomatoes - 1 can
Tomato Paste - 1-2 tablespoons
Chicken Stock - 1 cup
Red Wine - 2 cups
Rosemary
Thyme
Pepper Corns
Kosher Salt
Hardware: Dutch oven
Bring brisket up to room temperature (15-30 minutes)
Salt the brisket with kosher salt.
Add oil to dutch oven.
Brown brisket on both sides. (about 5+ minutes per side)
Start adding ingredients.
Shallots, garlic, liquids, herbs/spices.
Cover and cook in 350F oven for at least 2-3 hours.
Remove the meat and reduce the sauce remaining by at least half.
Slice across the grain and serve with the sauce.
