DESCRIPTION:
Ros omelette, also known as ras omelette, is a snack and street food in Goan cuisine. Ros means gravy in Konkani. It is a spicy gravy of either chicken or chickpeas, which is often similar to Xacuti.
INGREDIENTS:
Oil 2 tbs
Onions(chopped) ½ cup
Salt To taste
Ginger garlic paste ½ tsp
Turmeric powder ¼ tsp
Tomatoes(chopped) ½ cup
Red chilly powder ½ tsp
Fresh coconut paste 2 tbs
Garam masala powder ¼ tsp
Eggs 2 nos
Pepper powder ¼ tsp
Green chillies(chopped) ½ tsp
Mint leaves(chopped) 1 tbs
Coriander eaves(chopped) 1 tbs
METHOD:
1. Heat oil in a pan and add onions, salt, and saute it for 2 mins.
2. To it add ginger garlic paste, turmeric powder, tomatoes, red chilly powder, little salt and saute it, later place lid cook it for 2 mins with lid on it.
3. Remove lid add fresh coconut paste, garam masala powder, little water and cook with lid on it, Later switch off flame.
4. Take a bowl and add eggs, pepper powder, green chillies, mint leaves, coriander eaves, salt and beat it.
5. Heat 1 tbs oil in a pan and pour beaten eggs and cook it on both sides.
6. Take a serving bowl and pour cooked ros and place omelette.
7. Now ros omelette is ready to serve with poori, roti, rice.
