No Bake Vegan Brownies | Healthy Brownies Recipe
Ingredients:
1/2 cup walnuts
1 cup pitted dates (about 10 dates)
1/3 cup peanut butter (or almond, cashew, tahini)
1/3 cup maple syrup
1 teaspoon vanilla extract
1/4 cup cocoa powder
Chocolate Drizzle Ingredients:
1/2 cup dark chocolate chips
1 tablespoon coconut oil
1 teaspoon Maldon flaky salt
Instructions:
1. Blend all the brownie ingredients in a food processor on high speed until a dough forms.
2. Line an 8-inch loaf pan with parchment paper. Add all the dough to the lined pan. Place it in the freezer for at least 10 minutes so it’s easier to press the dough evenly across the pan.
3. After 10 minutes of freezing, place another piece of parchment paper on top of the dough. Press down with a cup or something with a flat edge until the dough is evenly spread across the pan. Put it back in the freezer for an hour.
4. After 1 hour of freezing, melt 1/2 cup of vegan dark chocolate chips and 1 tablespoon of coconut oil in the microwave.
5. Remove the piece of parchment paper onto the brownies and pour the melted chocolate on top and evenly spread it all over.
6. Sprinkle flaky salt on top and put it back in the freezer for 4 hours or overnight.
7. Remove the brownies from the pan and slice them into 10 or more pieces. Keep the brownies in the freezer to keep their form. Enjoy!
