Some Indian vegetables require good amount of prep time so I keep many Indian frozen vegetables in my freezer and use as needed. Sometimes, I cook one single vegetable or pair them up with some fresh vegetables.
To make Indian cooking easier, I have started this series: Indian Frozen Vegetable Cooking Made Interesting, Fun and Easy!
In this recipe I am using frozen Surti Papdi Lilva with fresh picked vegetable from my garden Turiya or Turai (Ridge Gourd or Chinese Okra). This Sabji Shaak taste amazing with Rotis.
Frozen vegetables can often be prepared with minimal effort, making them a quick and convenient alternative to fresh vegetables. They're also typically cheaper than fresh vegetables and tend to have a longer shelf life, helping you get the most bang for your buck.

Turiya Vaal Shaak Ingredients
1 tsp Tel (Oil)
1/2 tsp Rai(Mustard Seeds)
1/4 tsp Ajwayan(Carom Seeds)
A pinch of Hing(Asafoetida)
1 stem Kadhi patta(Curry leaves)
1/4 tsp Haldi(Turmeric Powder)
3 cups Turiya or Turai(Ridge Gourd)
2 cup Surti Papdi Lilva(Green Wild Beans)
Lahsan Hari Mirch as per taste(Garlic & Green Chili)
1 tbsp Nariyel Kopru(Coconut if available)
Hari Dungri Lahsan if available (Chives & Spring Onion)
1 tbsp Mumphali(Ground Peanut)
1 tbsp Til(Sesame Seeds)
1 tbsp Dhaniya Jeera powder(Ground Coriander Cumin
Namak to taste(Salt)
1/4 cup Hara Dhaniya(Coriander leaves)
Kaju Draksh 1 tbsp each(Cashew Raisins)
Chini or Khand if desired(Sugar optional)
