Hi Friends! I’m sharing this heart healthy dish with you in memory of my mom. Beans, rice, and cornbread was her favorite meal and it didn’t matter what kind of beans .
She passed away in July of 2010 due to heart disease.
I hope you enjoy this dish! As always my recipes are a guide. Feel free to tweak it to make it your own. As a side note, you can use any type of meat: andouille sausage, ham hocks, pork neck bones, or turkey legs or wings.

Queen of Hearts 15 Bean Soup w/Smoked Turkey
1 bg 15 Bean Soup
1 tsp baking soda
4 cups of water
2 1/2 lbs Smoked Turkey Necks
6 cups of chicken broth, low sodium
1 tbs Worchestire Sauce
2 tsp of poultry seasoning
1/2 cup Hemp Heart Seeds
3 bay leaves,dried
2 Queen of Hearts tomatoes, chopped
1 -14.5 oz can fire roasted tomatoes
1/4 cup tomato sauce
2 bags Fresh Mixed greens (kale, spinach)
2 tbs Butter,unsalted
1 -16 oz can black eyed peas,drained
1/2 tbs Tony’s Chachere’s Cajun seasoning (low sodium is an option.)
1 tsp dried thyme
1/4 tsp cayenne pepper
1/4 cup yellow onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup green onions, chopped
1 tsp tumeric
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
2 tsp chili powder
1 tsp Adams All Purpose Seasoning (optional)
1 pinch of white pepper to taste
2 tsp hot sauce (optional)
Directions
Quick Soak Beans
Wash them and remove any damaged beans.
Place in a large part with 4 cups of water and 1/2 tablespoon of baking soda.
Bring to a boil for 45 minutes.
Remove foam from the top of the pot. Remove from heat and rinse in a colander. Set aside.
Place smoked turkey necks in a separate large pot with 2 cups of water and 2 cups of chicken broth.
Add the onions and 1/4 of the seasonings. Add the Worchestire sauce. Let it come to a boil and cook for 1 hour.
While the turkey necks are boiling , add beans in a separate large pot and add the chicken broth.Add two cups of the turkey broth to the pot of beans.
Add the remaining seasoning,
diced Trinity (green onions, bell peppers , yellow onions),and two-three bay leaves to the beans. Let it cook on medium high heat for 1 hour. Remove the turkey necks and add the greens to the turkey necks broth. Let them cook for 20-30 minutes.
Add the turkey necks, tomatoes, tomatoes sauce, hemp heart seeds, and the cooked spinach and greens to the beans . Do not add the juice from the greens. Mix well.
Add the two tablespoons of butter.
Let it cook for another 45 minutes to an hour.
Stir it occasionally and add 1/2 cup to 1 cup of more liquid if it gets low.
Place a lid on it and let it cook for 20-30 more minutes or until beans are tender. Be sure to stir it occasionally to avoid stick to the pot.
Add the hot sauce and stir well.
Serve over rice and with buttermilk cornbread.
