Vegan and packed full of flavour, Chris cooks up the perfect Halloween curry, using a delicious M&S crown prince squash grown in Cambridgeshire. With green beans, Bombay style spice paste and coconut milk, this is a perfect family recipe, all for under £12.

“Make the most of seasonal squash with this creamy curry, packed with Bombay-style spice flavours. It’s super-nutritious and vegan-friendly, too. A real crowd-pleaser!”

Serves 4
Ingredients
1 M&S Crown Prince pumpkin, cut in half lengthways
2 onions, finely chopped
1 jar (180g) M&S Bombay style spice paste
1 tin (400ml) M&S reduced fat coconut milk
1 tin M&S organic chickpeas, drained
350g M&S Select Farms green beans, halved
1 tbsp honey
1 lemon
25g M&S coriander, chopped
2 packs (250g) M&S microwave basmati rice, to serve
1 tbsp Oil
1 tbsp Salt & pepper
150ml water
Method
1. Preheat the oven to 200°C/180°C fan/gas mark 6.
2. Peel the pumpkin and cut one quarter into 2cm-sized pieces. Grate the other quarter being used and set aside.
3. Place the pumpkin pieces onto a baking tray, drizzle with olive oil, season and roast in the oven for 30 minutes until golden and caramelised.
4. Meanwhile, heat 1 tbsp olive oil in a large non-stick frying pan over a medium heat. Add the onions and a pinch of salt and cook for 10 minutes until soft and golden.
5. Add the Bombay style spice paste and cook for 2 minutes, then stir in the grated pumpkin.
6. Add the coconut milk and along with 150ml water. Bring to the boil, cover loosely and simmer for 15 minutes until thickened, and then add the green beans and cook for a further 5 minutes.
7. Add the honey, the juice of half of the lemon and most of the chopped coriander.
8. Stir in the roasted pumpkin.
9. Serve with the rice and garnish with the remaining coriander.
