Savour summer flavours all year round with the Cook In. Enjoy these delicious vegetarian meatball and halloumi skewers created by @beckys.bowl using the grill pan.
Ingredients:
Flatbread:
- Kebabs (serves 2, with leftovers)
- 2 pepper (1 orange, 1 red - or whatever your preference is)
- 1 block of halloumi
- 1 small courgette
- Handful of cherry tomatoes
- All chopped to similar size chunks!
Marinade:
- 2 tbsp hot sauce
- 1 tbsp garlic powder
- 1 tsp smoked paprika
- 1 tsp all-purpose seasoning
Optional condiments:
- Tzatziki
- 150g plain Greek yogurt
- 2 tsp garlic powder
- 1/2 cucumber, grated
- 1/2 lemon, juiced
- 1 tsp of chopped fresh dill
- Salt and pepper
Creamy Tahini:
- 2 tbsp runny tahini
- 1 tsp American mustard
- 1 tbsp sweet chilli sauce
Method:
STEP 1: Switch on the Cook In with the grill pan at a med-high heat, to pre-heat while prepping.
STEP 2: Chop the peppers, halloumi, courgette, and tomatoes into similar size chunks.
STEP 3: In a bowl, add the chopped vegetables and meatballs, then coat in the marinade
STEP 4: Add the vegetables and meatballs onto the skewers.
STEP 5: Cook the kebabs for 20 minutes, flipping halfway.
STEP 4: While waiting, prep the condiments and heat your flatbread.
STEP 5: Add your condiments and some salad onto the flatbread. Place the kebabs on top and remove skewers. Enjoy!
