Here's a dinner example in our DIY fasting mimicking diet using fresh food. We started eating this soup blended but most of the time I prefer it in bite-sized pieces since I want to chew food (it's more enjoyable that way, yes?) If I'm really rushed, I toss all of the ingredients into a pan and saute it for a few minutes, season with some salt and pepper, and enjoy!
Some nights during this fast, I'll opt for a blended version and top with some fresh homegrown sprouts. It's lovely and looks like a Michelin-starred meal.
HOT TIP: If you didn't eat your cashews at snack time or your walnuts from breakfast, add them to your (blended) soup because it adds a richness that amps up the enjoyment level by ten fold. (Then outside of the fast, you may want to make this soup again and pair it with a couple of pieces of fresh, crusty French bread.) 🤤
