Don't get me wrong, I love the BEYOND MEAT BURGERS, but who can afford those all the time?! Who can FIND them all the time too? These seitan burgers by our instabuddy Nadia are freaking amazing! I actually screen shot the recipe before she changed it. Here is the recipe I used:
1/2 cp vital wheat gluten
1/2 cp garbanzo flour
1/8 cp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili flakes (or powder)
1/2 tsp paprika
1/4 tsp cayenne (I omitted this in the above video)
In saucepan: 1/4 cp barbecue sauce and 1/2 cp veggie broth
For boiling - 3 cps of veggie broth and 1 tbs bbq sauce
In a large bowl add all dry ingredients and whisk together. Bring contents of saucepan to a very light simmer and add to dry ingredients. Knead for approximately 4 mins and add additional vital wheat gluten if the dough is too sticky. Roll into a thick cylinder and wrap in plastic wrap and tie ends. Be sure to leave room for expansion. Simmer wrapped seitan in the 3 cps of veggie broth/BBq mixture for approximately 55 mins (flipping after 20 mins). Unwrap and let the seitan cool on a rack for approximately 15 mins and slice and prepared as wished.
