GAJAR AUR KHAJUR KA HALWA
Ingredients
8-10 medium carrots, grated
1 tablespoon pure ghee
½ cup sugar
2 cups skimmed milk
¾ cup dates, seeded and chopped
½ teaspoon green cardamom powder
8-10 cashewnuts, roughly chopped
8-10 almonds, blanched and slivered
½ cup crumbled khoya/mawa
Method
1. Heat the ghee in a non stick kadai. Add the carrots and stir. Cover and cook for about five minutes. Add the sugar and mix well. Cover and cook for further two to three minutes.
2. Add the milk and continue to cook for six to eight minutes.
3. Add the dates, green cardamom powder, cashewnuts, half the almonds and khoya and mix. Cook for ten to fifteen minutes or till almost dry.
4. Serve hot garnished with the remaining almond slivers.
