Ingredients: (This recipe is for 2 large cucumbers)
Cucumber
Salt
Red Onion
Roasted Peanuts
Cilantro
Lime
Salt
Black Pepper
Sauce:
4 Tablespoons water
3 Tablespoons sugar (+/- depending on preference)
4 Tablespoons Thai sweet chili sauce
2 Tablespoons Apple Cider Vinegar
Peel and slice cucumbers, put in bowl, salt, mix and refrigerate for 10-15 minutes.
Chop peanuts, cilantro and red onion (slice pieces as thin as possible because they are raw)
Sauce: in a pan, combine water, sugar, chili sauce, and vinegar. Simmer and whisk until everything is mixed well (5 minutes for less) Remove from heat and chill in the fridge.
Combine all of the ingredients and garnish with cilantro, peanuts, black pepper and lime juice
