Minute 1: It's the tortillapocalypse!! On the 2nd to last day of Nicki's #7daycarbtest she is digging into some corn tortillas. This would have been rough for me and it was not the easiest time for Nicki. She got through one tortilla (cold) and had to heat the rest on the stove to be able to finish. But it's interesting, she said that just the process of heating the corn tortillas made them "much better." Perhaps not that surprising but I hope you get a sense of how simple tweaks (a bit of salt, fat or heating) can dramatically alter the palatability of a food. Speaking of added fat: there are a lot of folks who think adding fat to a meal like this is a glycemic cure-all. It's not. In some people it may work as intended, in others this will actually increase both glycemic and insulin response, setting things up for increased hunger due to hypoglycemia. ALSO adding fat to a "meal" like this is also going to dramatically increase the palatability. It WILL make it easier to eat more. Again, I'm not suggesting there is a right way to handle any of this, the whole process is an exercise in AWARENESS. Folks want answers but they may not be remotely aware of the situation they find themselves in, which makes any type of solution tough to pin down. #wiredtoeat
Minute 2: How did tortillapocalypse go!? 50g of effective carbs from corn tortillas produced a 121 at 1 hr and a 90 at 2 hrs. So, not as much up OR down as some of the other options. But interestingly, Nicki reported feeling "much hungrier" after this test than any of the others. An interesting phenomena to note as this could pose a problem with regards to feeling particularly hungry at the next meal. For tomorrow's test Nicki will mix it up and pull out a meal that would make most dietitians happy but we'll have to see how happy it makes her blood sugar. #7daycarbtest #wiredtoeat
