Sirukeerai Mutton Kothukari Recipe:
For the masala:
Cinnamon - 1 stick
Green Cardamom - 5 nos
Cloves - 5 nos
Star anise - 1 no
Kalpasi - 1 piece
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Other Ingredients :
Oil - 2 tbsp
Curry Leaves - 10 nos
Green Chilli (finely chopped) - 2 nos
Onion (finely chopped) - 2 nos
Ginger Garlic Paste - 1 tbsp
Red Chilli Powder - 1 tsp
Turmeric Powder - ¼ tsp
Coriander powder - 2 tsp
Tomato (chopped) - 3 nos
Sirukeerai - 1 bunch
Minced Mutton - 1 kg
Salt - 1 tsp
Black Pepper Powder - ½ tsp
Water - ¾ Cup
Coriander Leaves (finely chopped) - 2 tbsp
Instructions:
1. Add all the spices required for the masala and dry roast it till it is aromatic.
2. Transfer it to a blender and blend it to a fine powder
3. Heat a kadai, add oil
4. Add the curry leaves and green chilli and let it crackle
5. Add the onions and saute till it turns translucent
6. Add ginger garlic paste and saute for a minute
7. Add the masala powders and saute for a minute
8. Add the tomatoes and cook it till it turns soft and mushy
9. Add the spinach and mutton and mix till they combine evenly
10. Add the ground masala powder and mix well
11. Cook the spinach and mutton in the water it lets out
12. Cover and simmer for 10 minute
13. Add salt and coriander leaves and mix it well for a minute
14. Take it off the flame and serve it hot
