- INGREDIENTS -
3 tbsp butter
yellow onion, chopped
2 carrots, grated
2 cloves minced garlic
Salt & black pepper, to taste
Smoked paprika (optional)
1 tbsp all-purpose flour
2 cups chicken stock, Homemade
1 cup half and half (50% whole milk + 50% heavy cream)
1 head broccoli, cut into small (also use the stalk )
Cheddar cheese shredded plus more for garnish
- METHOD -
1. In a pan, heat olive oil over medium heat
2. Add onion. Cook, stirring occasionally, until softened, about 5 minutes
3. Add the garlic, cook for 1-2 minutes
4. Stir in flour; cook, stirring constantly, 2 minutes
Gradually whisk in stock, breaking up any lumps
5. Add broccoli & carrots; Paprika, Salt and Black Pepper .. Stir in half and half. Reduce heat to low
6. Cover, and cook at a low simmer until broccoli is tender, about 15 minutes.
Stir in shredded cheddar. Taste, and add salt, if desired. Garnish servings with cheddar
