Here's how I make my quick and easy chicken and dumplings.
Ingredients
2 Tbsp. butter
2 Tbsp. olive oil
1 whole rotisserie chicken,
Salt and pepper
1/2 c. finely diced carrots
1/2 c. finely diced celery
1 whole medium onion, finely diced
1/2 tsp. ground thyme
6 c. chicken broth
1/2 c. heavy cream
For the dumplings:
2 c. all-purpose flour
1 Tbsp. baking powder
1 tsp. salt
1 1/2 c. half-and-half
1 tsp. thyme
2 Tbsp. minced fresh parsley
Salt as needed
Directions
1. Shred rotisserie chicken. Remove bones and set aside.
2. Melt butter in a pot over medium-high heat. Add diced onion, carrots, and celery. Stir and cook for 3 to 4 minutes over medium-low heat. Stir in ground thyme and then pour in chicken broth. Stir to combine, then add chicken. Cover pot and bring to a simmer.
3. While chicken is simmering, make the dough for the dumplings: sift together all dry ingredients, then add half-and-half, stirring gently to combine.
4. Drop teaspoons of dumpling dough into the simmering pot. Add minced parsley if using.
5. Cover pot and simmer for 15 minutes.
6. Taste for seasoning and salt if needed.
7. Let sit for 10 minutes before serving.
