Inasal:
Atsuete Chicken Oil
• 2 lemongrass stalk
• 8 garlic cloves, crushed
• 3 inch piece of ginger
• 2 cups cannola oil
• ⅓ cup atsuete seeds
• 1 red onion
• 200grams chicken skin
• 2 red chilies
• 1 tsp salt
Chicken and Assembly
• 2 lemongrass stalks, sliced
• 1 bottle of Bundaberg ginger beer (375ml)
• 1 tbsp salt
• 1 head of garlic, chopped
• 1 white onion sliced
• 3 inches of ginger sliced
• ¾ cup rce vinegar
• 4 chicken legs (thigh and drumstick)
BBQ Ingredients
• 450 grams pork shoulder
• 1/2 cup soy sauce
• 1/2 cup banana sauce (banana catsup)
• 1/2 cup lemon juicer
• ½ cup pineapple juice
• 1 cup brown sugar
• 6 tbsp garlic, minced
