Cake flour is different to all-purpose (plain) flour as it has a much lower protein (gluten) level than all-purpose flour. This leads to a softer, more tender crumb.Cakes made with cake flour tend to have a finer, lighter texture, making them more delicate.
The only difference between plain flour and self-raising flour is that self-raising flour already has the raising agent added to it.
