Nothing hits the spot quite like a refreshing drink! We’ve invited our expert Mixologist, Ed, to help us get cocktail ready just in time for Christmas. He’ll be sharing some of his favourite easy to make cocktail recipes to help keep you merry throughout the festive season. We're kicking it off with a refreshing and fun pear Bellini cocktail that can be made with champagne or prosecco.
INGREDIENTS
50ml pear puree
Ca’Bolani Prosecco
Lemon
Orange
HOW TO MAKE THE PEAR PUREE
Poach 1-2 pears in Cabalie red wine and add star anise, orange peel, clove and a cinnamon stick.
Simmer on a low heat until the pears are soft, 15- 25 minutes depending on pears.
Remove from heat and let the pears cool in their liquid, then drain the liquid and spices before transferring your pears into a blender.
Blend on high for a minute to get a really fine puree, adding water as needed to reach desired consistency.
