ULTIMATE PEAR SYRUP
---------------------------------
IN A MEDIUM SAUCE PAN OVER MEDIUM HEAT COMBINE:
1 CUP - WHITE WINE
1" PIECE - CHOPPED GINGER
1/2 CUP - ROCK SUGAR
1/2 CUP HONEY
2-3 - LEMON RINDS
1 TBSP. - LEMON JUICE
-STIR AND BRING TO A SIMMMER
ADD
2 CUPS - SWEET PEARS
1 SPRIG - ROSEMARY
1 TSP. - FRESH NUTMEG
---------------------------------
COVER AND SIMMER FOR 20 MINS ON MED. HEAT
---------------------------------
REMOVE FROM HEAT AND LET COOL TO ROOM TEMP.
---------------------------------
ONCE COOLED, STRAIN INTO A BOTTLE (DON'T MASH)
DROP IN A SPRIG OF MINT
ADD A FEW DASHES OF PEAR BITTERS
---------------------------------
FORTIFY WITH 1/2 OZ GIN
