New Orleans Style Gumbo:
This isn't my traditional shortcut or budget meal, so much as it was about making something authentic to the culture from which it was born. Even Dollar Tree has potential for making incredible dishes like this!
2 packages of smoked sausage links (7 oz. each) $2.50
4 cans of chicken $5.00
2 bags of frozen seasoning blend $2.50
1 bag of frozen okra $1.25
Chicken Bouillon $1.25
1 can of diced tomatoes $1.25
White Rice for serving $1.25
Creole Seasoning (recipe below)
Minced Garlic $1.25
Flour $1.25
Vegetable Oil or Margarine $1.25
Total cost (without seasoning) $18.75-Serves 8

Creole Seasoning (options)
Use premixed creole seasoning ($1.25) but be sparing because it's very salty. To make your own you will need:
2 1/2 teaspoons paprika
1 teaspoon salt
2 teaspoons garlic powder
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried leaf oregano
1 teaspoon dried thyme
Mix all ingredients together and store in an air tight container in pantry until ready to use.
Gumbo recipe:
In large heavy bottomed stock pot (I used a cast iron Dutch oven) add 2/3 cup of vegetable oil or margarine and melt completely. Whisk in 1 cup of all purpose flour and heat over medium low heat until the color of milk chocolate. This will take about 30 minutes and you'll want to be whisking pretty much the whole time. Be careful not to burn the roux or you'll have to start over. Patience is your friend here
When roux is ready, whisk in both bags of seasoning blend and 2 tablespoons of minced garlic. Sautee for 3 to 5 minutes then add 5 cups of water and 2 tablespoons of chicken bouillon. Bring this mixture up to a boil.
Add canned chicken (with liquid), canned tomatoes, okra, smoked sausage, and 1 to 2 tablespoons of creole seasoning. Allow this mixture to boil for 10 minutes to thicken as desired then serve over white rice.
