✅ TIPS
Enjoy them while warm or once completely cool down, either way these muffins are delicious and stay moist up to 5 days
✅sift all ingredients after mixing them together the sugar goes through better 😉 you want the dry ingredients to be as smooth as possible
✅you can get 6-8 jumbo muffins or 12 regular size muffins
✅bake at 350 for 25 minutes
Ingredients:
For the batter:
Mix the dry ingredients-
1 3/4 cup APF (all purpose flour)
1 cup sugar
1/2 cup brown sugar
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Wet ingredients-
15 oz 100% pure pumpkin
1/2 cup oil
2 eggs
1 tsp vanilla
1/4 tsp pumpkin pie spice extract(optional)
Cream cheese mixture-
8 oz cream cheese
4 tbsp sugar
2 tbsp APF
1 tsp vanilla
1 tbsp milk
Pinch of salt
