Grab a can of quality tuna, mix it with some kewpie mayo and srirachacha, prep your rice with vinegar and sugar. I didn’t have mirin, so I used Filipino spiced vinegar which isn’t sweet but has great flavor - just added a little more sugar, and mix in some furikake seasoning. I love the kind with smoked bonita flakes. Add the tuna to the rice, and finish with some more Kewpie mayo and srirachacha. Broil until top is nicely seared, around 5 minutes.
