Head of Callebaut UK Chocolate Academy, Beverley Dunkley, creates a range of ideas which highlight how chocolate can be used in afternoon solutions using a chocolate mousse in three different applicants. First is a pot with fruit and chocolate called a Verne of tropical fruits with single origin dark chocolate. The second is sable chocolate biscuit and finally a rich chocolate and mango sandwich dessert.
