Rich, spicy grilled chicken done Indonesian Lombok style. This is how to make Ayam Taliwang!
Ingredients:
For the spice paste:
6 large fresh red chillies, chopped
3 bird’s eye chillies, chopped
5 shallots, chopped
2 garlic cloves, chopped
3 cherry tomatoes, chopped
4 candlenuts
1tsp kencur powder (greater galangal powder), optional
3tsp belacan/terasi (shrimp paste)
1tbsp gula jawa (palm sugar)
100 – 200ml coconut milk
4 lime leaves
Salt & pepper, to taste
For the chicken:
500g bone-in chicken legs, or mix of thighs and drumsticks
2tbsp coconut oil
1 lime, cut into wedges, to serve
Sambal or kecap manis, to serve (optional)
