What could be better than a Western Omelette for brunch? A Western Omelette Pizza of course. Inspired by Matt's father, and his love of brunch, this recipe comes directly from the Brunch Life cookbook.
Matt starts this recipe of by combining the classic elements of pizza dough into a Kitchen Aid mixer. Matt's method for the creation of dough yields and impressive product so pay close attention to each step he takes as he puts it all together.
Once your dough is complete you will knead it for a few minutes. If you don't have much experience with dough than you may not know you need to flour your surface prior to kneading it to avoid a huge, sticky mess. Place your kneaded dough into a well oiled bowl, cover the bowl with a clean cloth and set it aside at room temperature for about 30 minutes.
While the pizza dough is proofing it's time to whip up our omelette. Thin slice green peppers, red peppers, and onions and then cut your ham into sizes appropriate for use as pizza toppings. Scramble one egg into a bowl that will be used as the egg wash on the pizza.
Now lightly grease a 12" non-perforated pizza tray, brush it with olive oil, and work your dough until it fills up the tray. It should be a pretty close fit. Lightly brush the entire surface of the pizza dough with egg wash. Cover that with shredded cheese and add your toppings. Preheat your oven to 525' F, slide your pizza in there and bake it for 10 to 12 minutes.
While you wait for the star of the show to finish baking quickly fry up a sunny-side egg. Check your pizza and providing it's looking good pull it out of the over and put your sunny-side egg right on top. Slice it up into equal pieces and enjoy!
