The classic hint of sweet flavor comes from the honey in the dough and from being boiled in a honeyed water. The addition of eggs gives it a rich and soft texture. They are usually topped with sesame seeds or poppy seeds. Montreal bagels are typically uneven and misshapen with a large hole. The soft texture after microwaving the next day is really yummy.

Ingredients:
1 tsp granulated sugar
1 1/2 cups water
2 tsp active dry yeast
1/2 cup honey
1 whole egg + 1 egg white
1/4 cup oil
2 1/2 tsp salt
5 cups all-purpose flour (or more if the dough is too sticky)
3 litres water + 1/3 cup honey for boiling
black and white sesame seeds for topping
bake at 450 F on the lowest rack of oven until medium brown.
