Khus Khus wale Baingan (Eggplant Curry with Poppy seeds)
Not sure about it's origin place, thought it is from West Bengal or Odessa.

Khus Khus wale Baingan is one of my favourite curry from my Mom's kitchen.🍆🍆
Ingredients:
1 large or ( 7-8 small) Baingan (Eggplant)
2 tbsp. Poppy Seeds
1tsp Mustard seeds
3-4 Green Chillies
5-6 Garlic cloves
1/2 tsp Turmeric Powder
4 tbsp. Curd
1/2 tsp Cumin seeds (Jeera)
2 tbsp. Oil
salt to taste
enough Oil for frying Eggplant
Recipe:
For Paste -
1. Add Poppy Seeds, Mustard seeds, Green Chillies, Garlic cloves in a mixer jar and make a fine paste.
For curry -
1. Cut Baingan into big pieces.
2. Marinate Baingan with Turmeric Powder and salt and keep aside for 15-20 minutes.
3. Heat Oil in a pan and fry all marinated Baingan in high flame and remove from pan.
4. Adjust Oil in pan up to 2 tbsp. heat and add Jeera and let it crackle.
5. Add the paste and sauté for 2-3 minutes.
6. Now add Curd and sauté again till the masala starts leaving the pan.
7. Add a little salt and fried Baingan and mix properly. Cook for 2 minutes.
8. Garnish with Coriander leaves and its ready to serve.
