Easy and Healthy Palak Paratha recipe - Good for quick lunch, Dinner or lunch box.
Ingredients:
Palak/Spinack - 1 Handful
Wheat flour - 2 cups
Green chillies - 2
Ginger - 1 inch
Jeera/cumin - 1 tsp
Oil - as required
Water - as required
Salt to taste
Clean and wash Palak/Spinach. Blanch it for 3-4 minutes. Put it in cold water for cooking to stop and retain the color. In a mixer jar take blanched palak, green chillies, ginger and jeera/cumin, grind into fine paste. For dough, take 2 cups of atta/Wheat flour, add salt to taste and mix well. Pour the spinach paste into the flour and mix well. Add water if required and knead to make a soft dough. Add 1 tsp of oil to the dough, knead thoroughly and cover it. Let it rest for 15 minutes.
Take small ball sized dough and roll it thick. Apply 1 tsp of oil and fold it twice. Roll the paratha until fairly thin and cook it on the tawa. Cook on both sides with some oil/ghee. Enjoy the delicious and healthy Palak Paratha with some pickles and curd!!
