Fresh out of Block Canyon.

What started as anatomical curiosity led me to some pretty cool facts about swordfish eyes. Swordfish possess a ‘brain heater’ organ that keeps their eyes & brain warm while the rest of the body remains ‘resolutely cold blooded’.

Zoologists eventually figured out this helps with neural processing speed–a sword eye kept at natural heated state registers flickers of light 10 times faster than the same eye when brought down to deepwater ocean temperature. Can confirm, the tissue behind the eyes was as warm as a dinner roll.

I’ll be making my second batch of fish eye ice cream (eyes cream) with these eyes and teriyaki BBQ’ing some of the rack tonight.
