Bradj are an Algerian specialty, from the Eastern regions of the country. Bradj also called M'braj, Lembraj or Mella are often made in the months of March to May, usually to mark the coming of spring. But today date paste is packaged and available all year, so this delicious bar cookie can be enjoyed year round with a glass of tea, fresh milk or lben, fermented milk.
Bradj is a rustic type of bar cookie; not too complicated to prepare. These generously spiced semolina bars are stuffed with a fragrant date that melts in the mouth.
It's also good to be mention that with the same dough, you can also make Mbesses which I previously share but also Makrout; small diamond-shaped pastries well known throughout North African countries. The latter, unlike Bradj, are fried or baked and then dipped in honey ...

🍴 INGREDIENTS 🍴
👉 English

pâte:
500 g - 3 tasses de semoule à grains moyens (semoule de blé dur, semoule moyenne)
1/2 cc de sel
2 cs sucres (facultatif)
150 ml - 1/2 tasse d'eau chaude
150g - 2/3 tasse de beurre fondu
4 c eau de fleur d'oranger (maz'har)
farce:
500g pâte de date
2 cs eau de fleur d'oranger (maz'har)
1 cs de cannelle moulue
1 pincée de clous de girofle moulus
noix de beurre
👉 Magyarul
tésztához:
500 g - 3 csésze közepes szemű búzadara (durumbúza)
1/2 tk só
2 ek cukor (opcionális)
150 ml - 1/2 csésze meleg víz
150 g - 2/3 csésze olvasztott vajat
4 ek narancsvirágvíz (maz'har)
Töltelék:
500g -datyola paszta
2 ek narancsvirágvíz (maz'har)
1 tk őrült fahéj
1 csipet őrült szegfűszeg
kis darab vaj
