MUSHROOM SERIES: CREAMY MUSHROOMS ON SOURDOUGH
INGREDIENTS:
- 300g chestnut mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 200ml vegan cream
- 1/2 tsp thyme
- Salt and pepper to taste
- Fresh parsley for garnish
- Sourdough bread slices for toasting
INSTRUCTIONS:
1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped onion and garlic, sauté until translucent
2. Add the sliced mushrooms and cook until they release their moisture and become tender
3. Stir in thyme, salt, and pepper. Mix well
4. Pour in the vegan cream and let the mixture simmer for about 5-7 minutes until it thickens slightly
5. Toast slices of sourdough bread
6. Spoon the creamy mushroom mixture over the toasted sourdough
7. Garnish with fresh parsley and a drizzle of olive oil
