This is a simple sweet and spicy ribs. No need to dig out the charcoal. You can make this week day or weekend. You can prep this the day before, then bake it when you are ready.
Dry Rub Recipe:
1 tsp garlic powder
1 tsp onion powder
1 tsp ground black pepper
¾ tsp salt
1 Tbsp smoked paprika
2 tsp liquid smoke (optional, for rubbing)
2 Tbsp vegetable oil (for rubbing)
Wet Sauce Recipe:
½ cup Sriracha hot chili sauce
½ cup honey
2 Tbsp rice vinegar (can sub lemon juice)
½ tsp sesame oil, vegetable oil or a small pat of butter
Directions:
1. Make the dry rub, set aside.
2. Clean rack of rib, remove membrane film from underside, trim away excess fat. Pat dry.
3. Rub liquid smoke onto both sides of ribs. Rub oil onto both sides of ribs. Rub “dry rub” onto both sides of ribs. Wrap in aluminum foil. Bake 300*F for 2 hours.
4. While you wait for ribs to bake, make the sauce. Mix together sriracha, honey, rice vinegar, oil. Simmer for 5 minutes over low heat, stir as necessary.
5. After 2 hrs, remove ribs from cooking liquid and discard the liquid. Baste both side of ribs with the sauce. Bake uncovered 400*F for 15 minutes to caramelize the sauce on the ribs.
6. Ribs will need to rest 10 minutes before cutting. While its resting, baste both side of the ribs again. Any extra sauce is for drizzling or dipping.
