A to Z Pinot Gris – Available nationwide. Intense, juicy and balanced, this is the perfect food wine with the vibrance to balance even the most decadent of cheese plates. Refreshing and lithe on the palate with aromas of meyer lemon, tangerine, apricot, quince, and honeysuckle. Bright acidity provides a counterpoint to rich, creamy cheeses and the mellow hint of honeyed fruit harmonizes with any salty flavors on the plate. For our Pinot Gris cheeseplate, we picked a healthy array of cheeses:
1. Humboldt Fog, a soft-ripened goat cheese from Cypress Grove. The vibrant Pinot Gris cuts through the buttermilk and cream flavors that coat the palate, allowing both the wine and cheese to be enjoyed fully. There is a congruent pairing as well between the floral and citrus notes of the wine and the cheese that plays beautifully together.
2. Mimolette, a French Normandy cheese that is aged for up to 24 months. Besides adding a pop of color to the cheeseboard, this hardy cheese provides a textural balance to the Humboldt Fog. With a flavor that’s salty sweet, it’s an excellent match for the clean citrus of the Pinot Gris.
3. Mt. Tam, a smooth triple-cream cheese from Cowgirl Creamery. This oh-so-soft and buttery cheese screams for a lush and acidic wine to counter it. More umami than anything else, it’s an excellent complementary pairing.
4. Extra Sharp White Cheddar, a semi-firm cheese from Cabot Creamery. A classic cheese from a fellow B Corp with a lovely citrusy tang to its sharp cheddar bite. A cheese this forward benefits from a wine that holds nothing back, and our Pinot Gris is a perfect pairing.
