Tindora peanut Fry also known as Dondakaya palli Vepudu is a delicious Indian Curry made with by stir frying thinly sliced Tindora tempered with seasonings, peanuts and shredded coconut.
Ingredients:
• Ivy gourd slices – 2.5 cups
• Salt – as per taste
• Oil – 3tbsp
• Turmeric powder – ½ tspv
• Mustard seeds – ½ tsp
• Cumin seeds – ½ tsp
• Bengal gram – ½ tsp
• Black gram – ½ tsp
• Dry red chilli - 2
• Garlic pods – 4 small
• Curry leaves – 1 spring
• Peanuts – ¾ cup
• Shredded coconut – ½ cup
• Chilli powder – 2 tsp
• Hing – a pinch
