Gingerbread Cookies are the ultimate Christmas cookies. They are perfectly spiced, and easy to make! Top them off with a foolproof icing that makes plenty for decorating, and you've got yourself a fun holiday activity for the whole family. Also you can cut these Christmas cookies into different shapes of your choice (gingerbread men, Christmas trees, snowflakes & more)

Ingredients:
For Cookies:
2 cups All Purpose Flour (Maida)
½ tsp Baking Soda
1 ½ tsp Spice Mix (nutmeg, cinnamon & clove)
1 tsp Ginger Powder
¾ cup Unsalted Butter (room temperature)
½ cup Brown Sugar
2 tbsp Molasses
For Icing:
1 cup Icing Sugar
1 tbsp Water
2-3 drops Lemon Juice (optional)
White Food Color (optional)
Method:
Add the brown sugar in a blender jar & grind it coarsely. Now set it aside.
In a big bowl sieve all the dry ingredients (excluding the brown sugar).
Now in another bowl add the butter & cream it with a blender till smooth.
Once smooth add the coarsely grounded brown sugar & cream it again till it turn fluffy & pale in color.
Now add the molasses & give it a quick whisk.
Next add the dry ingredients, mix well & knead it into soft firm dough as shown in the video. Refrigerate the dough for 15 minutes.
Place the dough between the parchment papers and roll it out evenly.
Using a cookie cutter cut the dough in desired shape & size. Here we have used ginger bread cookie cutter.
Remove the excess very carefully & place them on a lined baking tray. Bake the cookies in pre-heat oven at 160°C for 20 minutes.
In a smaller bowl, add icing sugar, lemon juice, water (gradually) & mix well to form the icing. One ready pipe it into a piping bag.
Once the cookies are baked let them cool & then decorate it using the icing sugar as shown in the video.
Your home made ginger bread cookies are ready.
