Key Lime Pie Recipe
TIMINGS:
• Prep Time: 10 mins.
• Chill Time: 6 hours.
• Total Time: 6 hours 10 mins.
SERVINGS:
10 - 12 slices.
INGREDIENTS:
For the biscuit base.
• 3 cups (300g/10½oz) Digestive Biscuits/Graham Crackers.
• ½ cup + 3 tbsps (150g/5oz) Unsalted Butter.
For the Key Lime Pie Filling.
• 1 can (397g/14oz) Sweetened Condensed Milk.
• Zest of 2 Limes
• ¼ cup + 1 tbsp (80mls/2.7floz) Double/Heavy Cream.
• 1 tsp Vanilla Extract.
• 1 cup + 1 tbsp (250g/8 ½ oz) Cream Cheese (Full Fat).
• ½ cup (120mls/4floz) Lime Juice (Freshly Squeezed).
For the decoration.
• ¾ cup + 1 tbsp (200 mls/6½ fl oz) Double/Heavy Cream.
• 2 tbsp Icing Sugar (optional).
• 1 tsp Vanilla Extract (optional)
• 6 Thin Slices of Lime.
METHOD:
To make the biscuit base:
1. Using a food processor blitz the biscuits into crumbs or place the biscuits in a bowl and using the bottom of a glass break them up.
2. Add the melted butter and mix.
3. Using your hand press the mixture into the bottom and up the sides of an 8”/20cm loose bottom tart tin.
4. Place in the refrigerator for 30 minutes to set.
To make the Key Lime Pie Filling:
1. Place the condensed milk, lime zest, double cream, vanilla extract, cream cheese and lime juice in a bowl and whisk together until combined.
2. Add a small amount of green gel food colouring and mix again for about 3-4 minutes until the mixture firms up.
3. Don’t worry if the mix is not really firm as it will set when placed in the fridge to chill.
4. Fill the pie crust with the filling mixture and smooth it out with a knife or spoon.
5. Return to the fridge to set for a minimum of 6 hours but preferably overnight.
To Decorate:
1. Whip the cream, icing sugar and vanilla extract together until it forms soft peaks.
2. Place the cream in a piping bag with your favourite tip and decorate around the edge of the pie.
3. Decorate with six thin slices of lime.
4. Keep refrigerated until ready to serve.
5. Serve with cream/ice cream (or both).

STORAGE:
• This Key Lime Pie will keep in the fridge for up to 4 days.
• Can be frozen for up to 3 months in a freezer bag or airtight container.
