It wasn’t enough that we threw lobsters in a taco. We just HAD to deep fry them in delicious lard, along with chopping up a fresh pico de gallo and making the best taco sauce you can imagine. Lobster Taco
3-4 Lobster Tails
2-3lbs Pork Lard
Tortillas
Orange Taco Sauce
4 roma tomatoes, halved lengthwise
1 yellow onion, sliced into thick rounds
1 cup vegetable oil
4 large cloves of garlic
½ cup packed, dried árbol chiles, stemmed
2 guajilo chiles, stemmed
⅓ cup apple cider vinegar
½ cup water
Salt to taste
Pico De Gallo
6 roma tomatoes, diced
½ red onion, minced
3 tablespoons chopped fresh cilantro
½ jalapeño pepper, seeded and minced
½ lime, juiced
1 clove garlic, minced
1 pinch ground cumin, or to taste
Salt and ground black pepper to taste
Mezcal Margarita
2oz mezcal
1/2oz Cointreau
1oz fresh squeezed lime juice
1/2oz agave nectar
