A wholesome vegetarian lasagna that is so comforting! The roasted butternut squash gives this dish a slightly sweet note that pairs well with the cheese and spinach filling.
Ingredients:
1 medium Butternut Squash
1 Yellow Onion sliced
1 Red Pepper julienned
4 cloves Garlic
4 cups (32oz jar) Pasta Sauce
2 cups (15 oz) Ricotta Cheese
10 oz package Frozen Chopped Spinach
1 large Egg
1 cup (8 oz) Mozzarella Cheese cubed
1 package (12 sheets) No boil Lasagna Noodles
3 tbsps Olive Oil
2 tsp Salt
1 tsp White pepper
1 1/2 tsp Red chili flakes
1/2 tsp Dried Thyme
Chopped Parsley for garnish
