Try this recipe for a fresh taste of summer. This Triple Melon Gazpacho is a truly versatile recipe that can be served as an appetizer, dessert, refreshing drink, or frozen as a popsicle. To add variation, you can garnish it with mint or a few slices of prosciutto. Here, we prepared it as a light, chilled soup.
Blend 2.5 c. watermelon, 1/2 cantaloupe, 1/4 honeydew, 6 strawberries, and 1 tsp. of lime juice until smooth. Refrigerate for at least an hour and a half. Serve chilled.
