These deliciously flavourful and moist puddings, will be the perfect way to end your Christmas meal.
Ingredients: (makes 12)
1 grated carrot
1 1/2 cups of chopped dates
2 1/2 cups of mixed fruit
the zest of one lemon and one orange
200ml guinness
125g butter
1/2 cup brown sugar
1 tablespoon of mixed spice
60g of breadcrumbs
2 tablespoons of golden syrup or honey
2 eggs
2/3 cup of plain flour
Caramel/Brandy sauce:
1 cup of whipping cream
4-5 tablespoons of butter
1 1/2 cups of brown sugar
1 teaspoon of vanilla
3 tablespoons of condensed milk
