DATE & WALNUT COOKIES
Ingredient
¾ cup white butter
¾ cup sugar
1 cup refined flour
¼ tsp baking powder
¼ tsp baking soda
2 eggs
¼ cup walnuts, chopped
¼ cup dates, chopped
50 ml milk
1 tsp vanilla essence
2 tsp chocolate chips
Butter for greasing
Method
1. Heat a non-stick pan, add butter and sugar. Stir and mix till both melt and combine well.
2. In a separate bowl, add flour, baking soda and baking powder. Mix well together and sieve.
3. Transfer the sugar butter mixture into a glass bowl, break in the egg in the bowl and mix it along with a few spoons of the flour mix, repeat the process with the other egg as well.
4. Once the eggs are combined well, add in the rest of the flour mixture in portions.
5. Mix the walnuts and dates in the last portion of flour mixture, add this to the egg batter and combine well.
6. Add milk and vanilla essence, mix well to make a smooth lump free batter. Add chocolate chips and mix.
7. Grease the baking dish, pour the prepared batter in the dish and bake in a pre-heated oven at 180˚ C for 30-40 minutes.
